Dhayalan Paul moved from 'Shoo Fee Ma Fe' at the acclaimed Madinat Jumeirah Hotel in Dubai to work next to Vivek Singh at the Cinnamon Club in London before taking charge of the Mint Leaf Lounge Kitchen.
The menu combines authentic Indian Cuisine with contemporary cooking techniques and stimulating presentation. The result is a powerful balance of modern and engaging food which maintains those distinctive authentic Indian flavours.
